Hearty Casserole

Warming winter dish packed full of protein

Hearty Casserole
  • 1 pack Vegetarian/Vegan Sausages
  • 1 Tablespoon Olive Oil
  • 2 Cloves Garlic (Chopped)
  • 1 Onion (Chopped)
  • 400g Organic Passata
  • 1 Red Pepper (Sliced into strips)
  • 150g Baby Mushrooms (Sliced)
  • 400g Cannellini Beans
  • 2 Sticks Celery (finely chopped)
  • 150ml Organic Vegetable Stock
  • 2 Tablespoons Parsely
  • To Taste Salt and Pepper
  • 2 Teaspoons Parika
  • 1/2 Teaspoon Chilli
Brown the sausages lightly in a separate pan and slice diagonally Heat the oil in a large frying pan, add the onion and celery and cook over a medium heat until soft.Add the garlic, mushrooms and peppers and cook for 3 minutes then stir in the paprika and chilli.Once combined stir in the Passata and vegetable stock.Stir in the beans and sausages, simmer gently for 10 minutes, add in the chopped parsley and season to taste.
